
I found this recipe in a family cookbook, and it soon became my very favorite. I love the texture – so nice and moist. I tweaked this recipe to make enough to feed a hungry bunch of siblings… eight or so, I believe. 😉
Of course, these pancakes are best when slathered with butter and drizzled with your brother’s amazing maple syrup…

These would make a wonderful weekend or Father’s Day breakfast! A side of bacon or sausage is most definitely recommended. 🙂
My Favorite Pancakes
Sift together:
6 cups flour
7 1/2 tablespoons sugar
4 1/2 tablespoons baking powder
3/4 teaspoon salt
Add:
7 1/2 cups milk
5 egg yolks
3/4 cup melted butter
Stir until just moist. (batter will be lumpy.) Fold in:
5 beaten egg whites
Let sit for at least 5 minutes to thicken up a bit.
Fry on a nonstick griddle and serve warm with butter and syrup!
These pancakes can be kept in the refrigerator to be heated up for a quick breakfast. I’m sure you could freeze them, as well.

Aw, you’re so sweet! Most of the pics on my blog were taken with my Canon Rebel T5, although I’ve posted some taken on an iPhone. I’ve had the Rebel T5 for quite a few years, and I really like it.
